Quick and Easy Appetizers and Party Foods
Whether for a party, friends over to watch a movie, or a family room full of friends watching the big game, you can impress your guests with a minimum amount of work. These recipes for Fiesta Appetizer Pie, Quick and Easy Cheese Ball and Sausage Balls should keep your guests asking for more. The Fiesta Pie goes together very quickly and easily then needs to chill for several hours. It is a great recipe to “make ahead”. The same goes for the cheese ball. And if your friends keep coming to your house because of the food, suggest you can bring one of these “portable dishes” to their house!
FIESTA APPETIZER PIE
3 small avocados, peeled, seeded and cut up
1 tbsp lemon juice
8-oz carton sour cream
8-oz bottle taco sauce
2 green onions, chopped fine
1 cup shredded Mexican Blend cheese
Tortilla chips
Mix a mixing bowl, mash the avocados with the lemon juice. Spread the mixture evenly in the bottom of a 9-inch pie pan. Spread the sour cream evenly over the avocado mixture. Spoon the taco sauce over the sour cream layer. Sprinkle the green onions over the taco sauce. Top with cheese. Cover with plastic wrap and chill for several hours. Serve with chips.
QUICK AND EASY CHEESE BALL
1 pkg (8-oz) cream cheese
1 jar Roka cheese
1 jar Old English cheese
1 tsp Worcestershire sauce
Dash of seasoned salt
Cheese must be at room temperature. Mix all ingredients together well. Form into a ball and cover with chopped parsley or finely crushed nuts. Chill until firm. Serve with assorted whole-wheat crackers.
SAUSAGE BALLS
3 cups biscuit baking mix
1 lb bulk sausage
1 cup American cheese, shredded
1 cup Cheddar cheese, shredded
Preheat oven to 400 degrees.
In a large bowl, crumble the sausage. Add the biscuit mix and cheeses; mix together well. Shape into 1-inch balls. Place on a baking sheet and bake in a 400 degree oven for 15 minutes.
